Mediterranean Breakfast Wrap with Spinach and Fresh Basil
Prep time: 15 minutes – Makes 2 wraps
Ingredients
Eggs…..4 large
Yellow onion…..1/4 cup
Sweet red pepper…..1/4 cup
Tomato…..1 small, chopped
Fresh baby spinach…..1/2 cup torn
Fresh basil….1 teaspoon, chopped
Whole wheat tortillas…..2 (7-8 inches)
Low-fat feta-cheese…..1 ounce crumbled
Extra virgin olive oil…..3 tablespoons
Salt…..1/8 teaspoon
Pepper….1/4 teaspoon
Directions
Heat the oil in a non-stick pan and add onion then sweet pepper. Cook the onion over medium heat until the onion is translucent. Add the eggs and fresh basil. Let the eggs set.
Place the baby spinach and tomato in the centre of the whole wheat tortilla then add the egg mixture and top with feta cheese. Fold and serve. :o)
