Shrimp in White Wine with Penne Pasta

Ingredients
Penne pasta…..1 - 16 ounce package
Extra virgin olive oil…..2 tablespoons
Red onion…..1/4 cup chopped
Garlic…..1 tablespoon chopped
White wine…..1/4 cup
Tomatoes…..3 - 14.5 ounce can diced
Shrimp…..1 pound peeled and deveined
Parmesan cheese…..1 cup grated
Directions
Fill a large pot three quarters full of water and add one teaspoon of salt. Bring to a boil and add penne pasta. Check pasta within eight to ten minutes. The pasta will be done when it is Al Dente, meaning slightly firm.
While pasta is boiling, place a medium saucepan over medium heat and add two tablespoons of olive oil and heat.
Add chopped red onion and chopped garlic. Cook until the onions are opaque and the garlic is toasted.
Add diced tomatoes and white wine and mix well. Reduce to simmer and let the flavors marinate for ten minutes stirring occasionally.
Add the shrimp to the skillet and let the shrimp cook five to seven minutes.
Drain the pasta and return it to the large pot.
Take the cooked ingredients in the skillet and add to the large pasta pot. Mix and serve hot with grated parmesan cheese.
