Spinach and Feta Pita Bake with Mushrooms and Tomatoes
Serves 6
Ingredients
Sun dried tomato pesto…..6 ounces
Whole-wheat pita bread…..6 - 6 inch
Roma tomatoes…..2 chopped
Fresh spinach…..1 bunch rinsed and chopped
Mushrooms…..4 sliced
Feta cheese…..1/2 cup
Parmesan cheese…..2 tablespoons grated
Extra-virgin olive oil…..3 tablespoons
Freshly ground black pepper…..to taste
Directions
Preheat the oven to 350 degrees.
On a large baking sheet, place the whole-wheat pita bread in rows and spread the top of each pita with the tomato pesto.
Add the Roma tomatoes, mushrooms, spinach, feta cheese and parmesan cheese.
Sprinkle extra-virgin olive oil over the top and add black pepper to taste.
Bake in the oven until the bread is crispy, about 12 minutes.
Remove from the oven and cut into four quarters then transfer to a platter.
Serve warm.
