Georgia Peach Soup

This is a delicious cold soup to serve as a first course for a luncheon or dinner party. It is a wonderful way to enjoy fresh Georgia peaches.

SIMPLE SYRUP

1 cup sugar

2 cups water

SOUP

10 fresh peaches

2 cups white wine

1 cup mineral water

1 cup simple syrup

Mint leaves and chopped pecans for garnish

For the simple syrup, in a saucepan on medium heat bring the sugar and water to a boil and boil until syrupy.

For the soup, in a saucepan on high heat bring enough water to cover the peaches to a boil. Dip the peaches in the boiling water for 1 minute. Remove the skins and pits. Place the peaches in a blender. Add the wine, mineral water, and simple syrup. Blend until smooth. Chill for several hours. Garnish with little cubes of fresh peaches, mint leaves, and chopped pecans.
