Carrot-Raisin Salad

A delicious salad that is great for both picnics and luncheons.

8 to 10 carrots

½ cup raisins

½ cup chopped pineapple

¼ cup mayonnaise

1 teaspoon granulated sugar

In a food processor or with a hand grater shred the carrots and put in a medium-size mixing bowl. Add the raisins, pineapple, mayonnaise, and sugar. Stir to mix well. Refrigerate until ready to serve.

Hint: A peeled and chopped Red Delicious apple can be added for a different taste.

YIELD: 6 TO 8 SERVINGS
