Curried Sweet Potato Salad


This makes an excellent tasty side dish for Thanksgiving or Christmas.


4 medium sweet potatoes

½ cup Hellmann’s mayonnaise

2 teaspoons curry powder

1 teaspoon coarse-ground mustard

1 tablespoon brown sugar

½ cup cranraisins

½ cup slightly toasted chopped pecans

2 green onions, sliced

Salt and pepper

Preheat the oven to 350°. Bake the sweet potatoes for 50 to 60 minutes, or until slightly firm but thoroughly cooked. Allow to cool; then peel and dice the potatoes. In a large bowl combine the mayonnaise, curry powder, mustard, and brown sugar. Add the sweet potatoes, craisins, pecans, and green onions. Season with the salt and pepper to taste. Chill overnight.
