Luscious Lemon Cream Salad

This pretty salad can be put into a mold. Its sunny yellow color will brighten any table. It is beautiful to use in the spring or summer with a centerpiece of yellow and white daffodils and daisies. This is also a wonderful addition to a pot luck dinner.

1 (10-ounce) bottle lemon-lime soda

1 cup miniature marshmallows

1 (8-ounce) package cream cheese, softened and cubed

2 (3-ounce) packages lemon gelatin

1 (20-ounce) can crushed pineapple, not drained

¾ cup chopped pecans

1 cup heavy whipping cream, whipped

In a small saucepan over low heat, stirring constantly, combine the soda, marshmallows, and cream cheese and heat until the cream cheese melts. Remove from the heat. Add the gelatin, stirring until it dissolves. Stir in the pineapple and the pecans. Chill until the consistency of unbeaten egg whites. Fold in the whipped cream. Cover, refrigerate, and chill until firm.

YIELD: 12 TO 15 SERVINGS
