This is a wonderful recipe for a ladies’ luncheon. Be sure to mold this in an attractive scalloped mold or individual molds and turn it out onto a bed of red lettuce leaves. It can be garnished with egg slices and pimientos. Placing pansies around the edges of the lettuce leaves makes a beautiful presentation.
1 (¼-ounce) envelope unflavored gelatin
½ cup water
1 cup mayonnaise
1 teaspoon salt
Dash of pepper
2 tablespoons lemon juice
¼ teaspoon Worcestershire sauce
½ cup finely chopped parsley
¼ cup chopped pimiento
¼ cup chopped green bell pepper
Dash of hot sauce
4 hard-cooked eggs, sliced
Fancy red leaf lettuce (optional)
In a saucepan over low heat, sprinkle the gelatin over the cold water. Stir until dissolved (about 3 minutes). Set aside to cool. In a large bowl, combine the mayonnaise, salt, pepper, lemon juice, Worcestershire sauce, parsley, pimiento, bell pepper, hot sauce, and the gelatin. Mix well. Fold in the eggs. Chill until firm. Make ahead so that the flavors will blend. Serve on a bed of lettuce leaves.
YIELD: 10 TO 12 SERVINGS
