This is one of my mother’s favorite salads. Although we all enjoyed it, she made it so often that we jokingly referred to it as “Not Apple Salad!” I like to combine several varieties of apples and leave some unpeeled.
1⁄ 3 cup all-purpose flour
¾ cup granulated sugar
1 cup heavy whipping cream
1 (15.2-ounce) can crushed pineapple, drained
¼ cup (½ stick) butter or margarine
½ cup sliced maraschino cherries
4 or more large apples, peeled and diced
1 cup chopped pecans
In a saucepan sift the flour and sugar together. Stir in the whipping cream and pineapple. Cook over medium heat until the mixture thickens. Remove from the heat and add the butter. Set the mixture aside to cool. In a bowl combine the cherries, apples, and pecans. Pour the cooled mixture over the fruit and mix well. Sprinkle some cherries on top if desired. Refrigerate for an hour before serving.
YIELD: 10 TO 12 SERVINGS
