Sexy Raspberry Salad

My husband says this is the sexiest gelatin salad he’s ever had. It’s sweet, it’s tart, it’s smooth, it’s pink, and I make it in a heart-shaped mold. It makes a wonderful treat for your Valentine.

1¾ cups water

2 (3-ounce) packages raspberry gelatin

1 cup sour cream

1 (10-ounce) package frozen raspberries, not drained

1 (8-ounce) can crushed pineapple

1 banana, peeled, sliced lengthwise and then in half across

½ cup chopped pecans (optional)

In a small saucepan on high heat bring the water to a rolling boil. In a large mixing bowl dissolve the gelatin in the boiling water. Make sure the gelatin is completely dissolved. Whisk the sour cream into the gelatin. Add the raspberries, pineapple, banana slices, and pecans. Pour the ingredients into a mold or an 8 × 8-inch dish. Place in the refrigerator and chill for at least 4 hours or overnight, no longer or the bananas will darken.

YIELD: 16 SERVINGS
