Spinach-Strawberry Salad

This delicious salad makes a wonderful colorful salad for Christmas or Valentine’s Day. We have tested it at a luncheon and at the restaurant where it was gobbled up.

1 (16-ounce) bag baby spinach leaves

1 quart fresh strawberries, sliced

10 to 12 cherry tomatoes

1 large purple onion, sliced

1 (16-ounce) bottle poppy seed salad dressing

Bacon bits (optional)

In a large bowl lightly toss the spinach, strawberries, tomatoes, and onion. Add the dressing and mix thoroughly. Sprinkle with bacon bits.

YIELD: 6 TO 8 SERVINGS
