This is a great way to enjoy your garden-fresh tomatoes. It is great with beans and will keep for several weeks in the refrigerator.
1 quart ripe tomatoes, drained and chopped
1 green bell pepper
1 onion
1 hot pepper (optional)
Salt
1 cup granulated sugar
1 cup cider vinegar
1 teaspoon mustard seed
In a large bowl combine the tomatoes, bell pepper, onion, and hot pepper if desired; mix well. Add salt to taste. In a saucepan over medium heat combine the sugar, vinegar, and mustard seed and bring to a boil, stirring often. Be sure the sugar is completely dissolved. Remove from the heat and pour over the tomato mixture. Allow to cool and then store in the refrigerator.
