This sauce is certainly a flavorful accent to blueberry pancakes or to blueberry-banana nut bread. It is wonderful when served warm.
2 cups water
¾ cup granulated sugar
¼ cup cornstarch
24 ounces fresh or frozen blueberries
In a medium-size saucepan on medium heat combine the water and sugar and bring to a boil. In a small bowl combine the cornstarch with a small amount of water to dissolve. Stir the cornstarch mixture into the boiling mixture. Add the blueberries and continue to cook, stirring continuously, until thickened. Remove from the heat, cool, and serve.
YIELD: 1 QUART
