2 cups boiling water
2 cups raisins
4 teaspoons baking soda
3 cups all-purpose flour
2 cups crushed bran cereal
2 cups granulated sugar
½ teaspoon salt
2 eggs, lightly beaten
½ cup vegetable oil
Preheat the oven to 350°. In a medium-size mixing bowl pour the boiling water over the raisins and baking soda. Set aside to allow the raisins to cool. Stir together the flour, cereal, sugar, and salt. In a small mixing bowl slightly beat together the eggs and oil with a fork and stir into the dry mixture. Stir this mixture into the raisin mixture. Pour equal amounts of the batter into three greased bread pans and bake for 50 to 60 minutes.
Hint: To prevent fruit or nuts sinking to the bottom of a bread or cake batter, shake them in a zip-lock bag with a small amount of flour, lightly dusting them before adding them to the batter.
