2 cups granulated sugar
1½ cups vegetable oil
3 eggs
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 teaspoons vanilla extract
1 (8-ounce) box chopped dates
1 cup chopped pecans
1 cup flaked or shredded coconut
3 cups diced apples
Preheat oven to 350°. In a large mixing bowl cream the sugar and oil. Add the eggs one at a time. In a second large mixing bowl sift the flour and then add the salt, baking soda, baking powder, cinnamon, and nutmeg. Add these dry ingredients to the sugar mixture. Add the vanilla extract, dates, pecans, coconut, and apples. (Be sure to add the apples last.) Fill 24 greased muffin cups ⅔ full of batter. Bake about 15 to 20 minutes or until brown.
