Yeast Rolls

These rolls melt in your mouth and butter is their best friend.

1 cup water

¼ cup shortening

¼ cup butter plus melted butter for brushing

⅓ cup granulated sugar

1 (¼-ounce) envelope active dry yeast

1 egg

1 teaspoon salt

3⅔ cups all-purpose flour

In a small saucepan bring the water to a rolling boil over high heat. In a large mixing bowl pour the boiling water over the shortening and the ¼ cup butter. When the shortening and butter have melted, add the sugar and allow the mixture to cool to lukewarm. Add the yeast and stir until dissolved. Add the egg and salt.

Sift the flour into the liquid about ¾ cup at a time until all the flour has been mixed into the batter. Add enough additional flour to make a soft dough. Set the batter aside to rise until doubled. This will take about 1 hour.

Punch the dough down and form it into rolls. Let it rise again until it has almost doubled. This should take about ½ hour.

Preheat the oven to 350°. Bake the rolls for 10 minutes on an ungreased baking pan. When you take the rolls from the oven, brush them with the additional melted butter and serve immediately.
