Broccoli Casserole

2 (10-ounce) packages frozen broccoli

1 (10¾-ounce) can condensed cream of mushroom soup

1 cup mayonnaise

1 egg

¾ plus ¼ cup grated cheddar cheese

Salt and pepper

½ cup Ritz cracker crumbs

Preheat the oven to 350°. Butter a casserole dish. Cook and drain the broccoli following the package instructions. In a medium-size bowl combine the broccoli, soup, mayonnaise, egg, ¾ cup of the cheddar cheese and the salt and pepper to taste. Pour into the buttered casserole dish. Top with the cracker crumbs and bake for 30 minutes or until bubbly. Remove from the oven. Top with the remaining ¼ cup cheese and return the casserole to the oven until the cheese is melted.
