6 large sweet potatoes
2 cups granulated sugar
2 tablespoons vanilla extract
1 cup (2 sticks) butter or margarine
Preheat the oven to 350°. Wash and peel the sweet potatoes. Cut into 1½-inch rounds. Place in a large casserole or baking dish and top with a mixture of the sugar, vanilla, and butter. Bake uncovered for 1 hour.
