3 cups diced carrots
Salt
6 crushed soda crackers
1 teaspoon onion salt
¼ cup chopped green bell pepper
⅓ to ¼ teaspoon black pepper
2 tablespoons butter, melted
½ cup grated sharp cheddar cheese
Preheat the oven to 425°. In a medium-size saucepan on medium heat cook the carrots in ½-inch boiling salted water for 10 minutes. In a mixing bowl combine the crackers, onion salt, bell peppers, and black pepper. Grease a 1-quart baking dish. In the baking dish alternate layers of the carrots and layers of the crumb mixture, ending with the crumb mixture. If there is any liquid left from cooking the carrots, spoon it over the top of the casserole. Pour the melted butter over the top and sprinkle with the cheese. Bake for 15 to 20 minutes or until the cheese melts.
