This recipe comes to us from Janet Huckabee, First Lady of the State of Arkansas. She said she usually serves this casserole for family gatherings such as Thanksgiving dinner. She also said that she included this recipe in her family Christmas cards a few years ago and that it is truly one of her favorites.
½ cup (1 stick) butter
½ medium red bell pepper, chopped
½ medium green bell pepper, chopped
½ medium onion, chopped
2 eggs
1 (7.5-ounce) Jiffy corn muffin mix
1 (15-ounce) can creamed corn
1 (15-ounce) can whole corn, drained
1 (8-ounce) container sour cream
Milk
2 cups shredded cheddar cheese
Paprika
Preheat the oven to 325°. In a small skillet on medium heat melt the butter and sauté the bell peppers and onion. In a medium-size mixing bowl mix together the eggs, corn muffin mix, creamed corn, and whole corn. Add the onion and peppers. Pour into a 2-quart casserole dish. Mix the sour cream with a little milk and spread it on top. Add the cheese and sprinkle with the paprika. Bake for 45 minutes.
