Cornwallis Yams

3 medium sweet potatoes, cooked and mashed

½ cup granulated sugar

¼ teaspoon salt

¼ teaspoon ground cinnamon

¼ teaspoon nutmeg

¼ cup (½ stick) butter

1 egg, beaten

½ cup crushed pineapple

¾ cup milk

Flaked coconut

Preheat the oven to 350°. In a large mixing bowl combine the sweet potatoes, sugar, salt, cinnamon, nutmeg, butter, egg, pineapple, and milk. Mix well. Pour this mixture into a greased baking dish. Bake for 35 minutes. Remove from the oven and sprinkle the coconut over the top of the casserole. Return to the oven and bake for another 10 minutes.
