Governor Mark Sanford’s Favorite Butter Bean Casserole
Jenny Sanford, First Lady of the State of South Carolina, sent this recipe to us. As you can see from the title this is one of her husband’s favorites.
2 (16-ounce) packages frozen butter (lima) beans (or fresh), cooked
1 (28-ounce) can diced tomatoes (or 3 cups diced fresh tomatoes)
1 small onion, chopped
1 small green bell pepper, chopped
½ plus ½ cup grated sharp cheddar cheese
Preheat the oven to 350°. In a large mixing bowl combine the butter beans, tomatoes, onion, pepper, and ½ cup cheese. Mix well. Place these ingredients in a greased, 3-quart casserole dish. Top with the remaining ½ cup cheese. Bake for 30 to 35 minutes or until warm and bubbly.
Hint: This is best when it is made with fresh butter beans and fresh tomatoes.
