Green Beans

1⅔ cups water

4 ounces fatback

4 ounces cooked ham or ham hock

2 tablespoons bacon grease

¼ teaspoon brown sugar

Salt and pepper

1 (28-ounce) can Italian cut green beans

In a medium-size stockpot on medium heat combine the water, fatback, cooked ham or ham hock, bacon grease, brown sugar, and salt and pepper to taste. Bring to a boil. Drain the green beans and add the beans to the boiling stockpot. Return the green beans to a boil and allow to slowly boil for 20 to 25 minutes to season.
