Lee’s Baked Garlic Cheese Grits

This is a favorite used often for guests.

1 cup coarse grits

1 plus ½ sticks butter

1 medium onion, chopped

1 teaspoon salt

½ to ⅔ pound Velveeta cheese (can use sharp cheddar)

2 garlic cloves, chopped

4 eggs

Milk

⅔ to 1 cup cornflakes

Preheat the oven to 350°. In a medium-size saucepan prepare the grits according to the package directions. In another medium saucepan over low heat melt 1 stick butter. Add the onion, salt, cheese, garlic, eggs, and enough milk to make 1 cup liquid. Stir as the cheese melts and everything blends together. When the liquid is smooth, add it to the grits and mix. Pour into a buttered casserole dish. In a small saucepan over low heat melt the remaining ½ stick butter. Stir in the cornflakes. Pour this mixture on top of the casserole. Bake for 30 minutes. Serve hot.
