Onion Pie

This recipe is a favorite of Kitty Jacobs, who is retired as an Atlanta tour guide. Kitty has been a frequent guest at Blue Willow Inn. She and the Van Dykes became friends and she continues to visit from time to time.

1 cup fine saltine cracker crumbs

4 plus 2 tablespoons margarine, melted

2 cups thinly sliced onions (2 medium onions)

¾ cup milk

2 eggs, lightly beaten

¾ teaspoon salt

Dash of pepper

¼ cup shredded sharp cheddar cheese

Dash of paprika

Preheat the oven to 350°. In a small bowl mix the cracker crumbs with 4 tablespoons of the melted margarine. Press the crumbs into the bottom and sides of an 8-inch pie plate. In a small skillet on medium heat cook the onions in the remaining 2 tablespoons margarine, stirring to separate the rings. Cook until the onions are tender but not brown. Place the onions in the pie shell. In a small bowl combine the milk, eggs, salt, and pepper. Pour this mixture over the onions. Sprinkle with the cheese and paprika. Bake for 30 minutes or until a knife inserted halfway between the center and the edge of the pie comes out clean. Serve hot.
