2 pounds small red new potatoes
¼ plus ¼ cup (1 stick) butter
½ teaspoon salt
Chopped fresh parsley
Wash the potatoes. Place in a stockpot over medium heat with enough water to cover plus one cup. Add ¼ cup of the butter and the salt. Bring the potatoes to a boil and allow to boil for 16 to 18 minutes or until tender when pierced with a fork. Remove the potatoes from the water and place in a serving bowl. Melt the remaining ¼ cup butter and pour it over the potatoes. Sprinkle with chopped parsley.
