Skillet Tomatoes and Zucchini

2 tablespoons butter or margarine

2 small zucchini, sliced

1 medium onion, sliced

2 medium tomatoes, sliced

½ teaspoon garlic salt

¼ teaspoon chopped fresh basil

Dash of pepper

1 cup shredded mozzarella cheese

1 cup seasoned croutons

In a large skillet on medium heat melt the butter or margarine. Add the zucchini and onion and sauté until tender. Add the tomatoes, garlic salt, basil, and pepper. Cover and cook until the tomatoes are tender. Remove from the heat and sprinkle with the cheese and croutons. Cover and allow the dish to stand for 2 to 3 minutes until the cheese melts.

YIELD: 6 TO 8 SERVINGS
