Sophia’s Squash Casserole

This is a favorite requested for all potluck suppers.

3 cups cooked and drained squash

2 eggs, beaten

1 cup milk

¾ stick butter, melted

1 teaspoon salt

1 teaspoon pepper

12 saltine crackers, crumbled

1 cup chopped onion

½ plus ½ cup grated cheddar cheese

Preheat the oven to 375°. In a mixing bowl combine the squash, eggs, milk, butter, salt, pepper, crackers, onion, and ½ cup grated cheese. Pour into a casserole dish. Cover with the remaining ½ cup grated cheese. Bake for 45 minutes. Serve warm.
