2 tablespoons butter, melted
2 tablespoons all-purpose flour
1 (5⅓-ounce) can evaporated milk
1 cup chicken broth
3½ cups sliced Vidalia onions
½ teaspoon salt
⅔ cup toasted slivered almonds
1 cup breadcrumbs or croutons
½ cup grated cheddar cheese
Preheat the oven to 375°. In a medium-size saucepan over medium heat combine the butter, flour, evaporated milk, and chicken broth. Cook, stirring constantly, until thick and smooth. Add the onions, salt, and almonds. Pour the mixture into a buttered 1½-quart casserole dish. Cover with the crumbs and grated cheese and bake for 30 minutes.
Hint: If Southern sweet Vidalia onions are not available, Texas Sweets or Washington State Sweets will work as well.
