True to Southern dining style, the main dishes of the Old South didn’t feature many of the tender cuts of meat common to us today. In the Old South grass fed animals and hunting were the norm. Wild game such as venison, turkey, goose, and others were served at the table. Meats were often marinated or served with gravies and sauces. Farmers still raise hogs, sheep, goats, and cattle for meat. Today’s main dishes can range from a single meat dish to a casserole with meat and vegetables to a hearty soup or stew.
