This is a good way to use leftover roast beef.
2 tablespoons butter
1 cup cubed leftover beef
1 medium onion, finely chopped
2 cups boiling water
1 cup cubed uncooked potatoes
Salt and pepper
In a medium-size skillet on medium heat melt the butter. Add the beef and onion and cook in the butter. Add the boiling water and the potatoes. Add the salt and pepper to taste. Turn the heat to medium-low and cover the skillet, allowing the ingredients to cook slowly until all are tender. The hash should have plenty of gravy; more hot water may be needed and a small amount of flour may be added for thickening if needed. Serve on toast.
