Chipped Beef with White Gravy

This is a very quick recipe to use for Sunday night supper, or it can be served on Saturday morning with grits and eggs.

¼ cup (½ stick) butter

1½ tablespoons all-purpose flour

1½ cups milk

Salt and pepper

2 pounds cooked roast beef, very thinly sliced

Toasted sliced white bread

Preheat the oven to 350°. In a saucepan on low heat combine the butter and flour. Stir and mix to a thick texture. Stir in the milk and salt and pepper to taste. Bring to a simmer, stirring often. Place the sliced beef in a 9 × 13-inch casserole dish. Pour the white gravy over the beef. Cover and bake for 15 to 20 minutes. Serve over crisp toast.

Hint: This recipe can be used for chipped ham by simply substituting very thinly sliced ham for the roast beef.
