One of the favorite dishes served at the Blue Willow Inn. You’ll find it almost every Thursday and sometimes even on a Sunday.
1½ pounds ground beef
3 eggs
½ plus ½ cup ketchup, divided
1 cup cornflakes
3 leftover biscuits or 5 to 6 slices white bread
¼ cup chopped green bell pepper
¼ cup chopped onion
1 tablespoon Worcestershire sauce
Salt and pepper
Preheat the oven to 350°. In a large mixing bowl combine the ground beef, eggs, ½ cup of the ketchup, cornflakes, biscuits or bread, bell pepper, onion, Worcestershire sauce, and salt and pepper to taste. Mix the ingredients well and pour the mixture out onto a sheet pan. Work the ingredients several times as if kneading bread and then mold it into a loaf. Place the mixture in a loaf pan and bake for 30 to 40 minutes or until done. Remove from the oven and top with the remaining ½ cup ketchup.
YIELD: 5 TO 6 SERVINGS
