Shrimp Mold

This mold can be made a day ahead to enhance the seasoned flavor and then served with an assortment of crackers. It also prevents the rush of preparation just before the party is to begin.

2 (3-ounce) packages unflavored gelatin

½ cup water

1 pound cooked shrimp

2 cups mayonnaise

1 small onion, grated

2 tablespoons horseradish

3 to 4 drops red food coloring to make mixture light pink

Juice of 1 lemon

Sprinkle the gelatin in the water and place it in the top of a double boiler over simmering water to dissolve. When the gelatin has dissolved, remove it from the heat. Add the shrimp, mayonnaise, grated onion, horseradish, food coloring, and lemon juice. Pour the mixture into a mold. Place in the refrigerator and chill for 2 to 3 hours. Remove from the mold to serve. Turn it out on an attractive platter and serve with crackers.
