This was one of my mom’s favorite recipes to bake when I was a child. I always looked forward to it because it contained sausage. I have baked this recipe for my family many, many times over the fifteen years that I have been married, and I look forward to passing it along in the future to my children and their spouses.
1 pound bulk pork sausage
1 (10¾-ounce) can consommé
1 cup uncooked rice
¼ cup finely chopped onion
Salt and pepper
1 cup water
In a skillet on medium heat brown the sausage. Drain. Preheat the oven to 375°. In a mixing bowl combine the consommé, rice, onion, salt and pepper to taste, and water. Place in a 2-quart casserole dish. Cover with the sausage. Cover with foil. Bake for 45 minutes or until the liquid is absorbed.
YIELD: 6 TO 8 SERVINGS
