Shredded Potato & Ham Pie

4 eggs, lightly beaten

1 cup frozen mixed peas and carrots

1 cup chopped cooked ham

1 plus ¼ cups shredded cheddar cheese

½ cup milk

¼ cup chopped onion

2 medium potatoes, peeled and shredded

Salt and pepper

Preheat the oven to 350°. In a large bowl combine the eggs, peas and carrots, ham, and 1 cup of the cheese. In a medium-size bowl combine the milk, onion, potatoes, the remaining ¼ cup cheese, and salt and pepper to taste. Press this potato mixture into the bottom and up the sides of an ungreased, 9-inch pie plate or 1½-quart baking dish. Pour the ham filling into the potato-lined pie plate. Bake for 45 to 50 minutes or until the center is set.
