This is an easy dish that looks impressive and tastes like a lot of effort was required.
3 cups chopped cooked white chicken meat
1 small chopped onion ¾ cup mayonnaise
1 (6-ounce) package Uncle Ben’s wild and white rice, prepared
1 (2-ounce) jar pimientos, drained
1 (10¾-ounce) can condensed cream of celery or cream of chicken soup
1 (15-ounce) can French-style green beans, drained
1 (8-ounce) can water chestnuts, drained and diced
1 cup grated cheddar cheese Salt and pepper
1 cup crushed cheddar crackers
Preheat the oven to 350°. In a large mixing bowl mix the chicken, onion, mayonnaise, rice, pimientos, soup, green beans, water chestnuts, cheese, and salt and pepper to taste. Place in a 9 × 13-inch baking dish. Sprinkle with the crackers. Bake for 30 minutes.
