This is an easy and delicious recipe that our former manager of the Blue Willow gift shop, Sandi McClain, gave us. Sandi also decorated Blue Willow’s Magnolia Hall Catering Facility, and at a ladies’ luncheon and fashion show there the recipe was a big hit and has been served often since.
6 (4-ounce) skinless boneless chicken breasts
¾ cup all-purpose flour
½ cup (1 stick) butter
Lemon pepper
½ tablespoon lemon juice
Rinse the chicken breasts and pound them two to three times with a meat mallet. Dredge the chicken in the flour. In a large, heavy skillet melt the butter. Place the chicken breasts in the skillet and sprinkle generously with lemon pepper. Cook over medium heat for 6 minutes. Turn the chicken to the other side and sprinkle again with the lemon pepper. Cook for 6 minutes. When the chicken has cooked on both sides, turn the skillet down to low heat and add the lemon juice. Cook for an additional 5 minutes.
