4 (6 to 8-ounce) flounder fillets
¼ cup butter, melted
Salt
½ teaspoon lemon pepper
Sliced lemon
Sliced almonds (optional)
Fresh parsley sprig (optional)
Preheat the oven to 350°. Lightly butter the inside of a baking pan. Place the flounder fillets in the pan. Using a pastry brush, baste the flounder with the butter. Sprinkle with salt to taste and the lemon pepper. Bake for 12 to 15 minutes, depending on the thickness of the fillets. Remove from the oven and garnish with the lemon slices and almonds and parsley if using.
Hint: For Baked Flounder Amandine, lightly toast slivered almonds and sprinkle them on top of the fillets before baking. Turbot fillets can be easily substituted for flounder.
