Salmon Croquettes

1 (14.75-ounce) can salmon packed in

water

2 eggs

1 heaping tablespoon chopped onion

¼ cup all-purpose flour

Cooking oil

In a medium-size mixing bowl combine the salmon, eggs, onion, and flour. Mix well. Roll the salmon mixture into balls about the size of golf balls. If the mixture seems too loose, add more flour and mix well. Pat into rounds about ½-inch thick. In a heavy skillet pour enough cooking oil to cover the bottom of the skillet. Cook the salmon patties on medium heat for 7 to 8 minutes on each side, adding oil when necessary to cover the bottom of the skillet. After the patties are done, remove them from the skillet and drain on paper towels.
