Seafood au Gratin

1½ plus ½ cups milk

½ cup Cheez Whiz

½ cup grated cheddar cheese

½ teaspoon salt

Dash of black pepper

¼ cup all-purpose flour

1½ cups cooked and peeled shrimp

1 (8-ounce) can lump crabmeat

8 ounces cooked flounder or turbot

In a medium-size heavy saucepan on low heat mix 1½ cups of the milk with the Cheez Whiz, cheddar cheese, salt, and pepper. Cook, stirring constantly, until the cheese melts and the sauce simmers. In a small mixing bowl combine the flour with the remaining ½ cup milk. Stir until smooth. Stir this into the cheese mixture and continue to cook until it thickens. Simmer for 20 minutes, stirring constantly. Preheat the oven to 350°. In a mixing bowl combine the shrimp, crabmeat, and flounder. Stir to break apart the fish and the crabmeat. Transfer the seafood into a 2-quart casserole dish or au gratin dishes. Pour the cheese sauce over the seafood to cover. Bake for 20 to 25 minutes until the cheese begins to brown.
