Fried Squirrel

1 egg, beaten

½ cup milk

3 large squirrels, cleaned and cut up

All-purpose flour

Salt and Pepper

¼ cup vegetable oil

GRAVY

½ cup all-purpose flour

1½ cups sweet milk

Salt and pepper

In a large mixing bowl combine the beaten egg and milk. Place the squirrel pieces in this mixture to soak for about 20 minutes. In a medium-size bowl combine the flour and salt and pepper to taste. Heat the vegetable oil in a large skillet on medium-high heat. Dredge the squirrel pieces in the flour mixture and place in the heated oil. Fry the squirrel until done. Remove from the pan, reserving the pan dripping for the gravy. Place on a serving platter.

For the gravy, stir the flour into the reserved pan drippings. Cook, stirring continuously over low heat, until the flour mixture is a golden brown. Slowly add the milk, stirring continuously. Add the salt and pepper to taste. Allow this mixture to cook, stirring occasionally, until it is thick and smooth. Pour over the squirrel.
