Date Balls

½ cup (1 stick) margarine

1 cup packed light brown sugar

1 (8-ounce) box dates

2 tablespoons hot water

2 cups Rice Krispies cereal

1 cup chopped pecans

1 (7-ounce) can coconut

Confectioners’ sugar for coating

In a saucepan on medium heat combine the margarine, brown sugar, dates, and hot water. Cook, stirring continuously, for about 6 minutes, allowing the margarine to melt and the brown sugar to dissolve and blend with the dates. Remove from the heat and add the rice cereal, pecans, and coconut. Mix well. Allow to cool slightly. Shape into balls. Roll in the confectioners’ sugar.

YIELD: 40 BALLS
