These are delicious with coffee or hot tea. Not too sweet or fudgy, just good and chocolatey. Wonderful addition to a brunch or morning coffee.
2 ounces unsweetened chocolate
½ cup (1 stick) butter
½ plus ¼ cup chopped walnuts
1 cup granulated sugar
2 eggs, well beaten
1 teaspoon vanilla flavoring
½ cup sifted all-purpose flour
⅛ teaspoon salt
Preheat the oven to 400°. Grease a 9 × 13-inch baking dish. In the top of a double boiler melt the chocolate and butter. Stir in ½ cup of the nuts. Add the sugar, beaten eggs, and vanilla. Mix well. Add the flour and salt, stirring until smooth. Spread the mixture evenly in the pan. Sprinkle with the remaining ¼ cup of nuts. Bake 15 to 18 minutes. Turn the oven off and leave inside the oven for about another 5 minutes. Cool and cut into squares.
Hint: Check while cooking as some ovens bake faster. Fudge cuts are best when they are moist.
