Lemon Squares

1 cup (2 sticks) butter, softened

2 cups all-purpose flour

½ cup confectioners’ sugar plus extra for sprinkling

FILLING

4 eggs

2 cups granulated sugar

4 tablespoons lemon juice

4 tablespoons all-purpose flour

½ teaspoon baking powder

Preheat the oven to 350°. In a medium-size bowl combine the butter, flour, and confectioners’ sugar. Mix well. Press this pastry mixture into the bottom of a 9 × 13-inch baking pan. Bake for 15 minutes.

For the filling, preheat the oven to 350°. In a mixing bowl beat the eggs well. Add the sugar and lemon juice. Fold in the flour and baking powder. Mix well. Pour onto the pastry and bake for an additional 25 minutes.

Remove from the oven and sprinkle with confectioners’ sugar while warm. Allow to cool and cut into squares.

YIELD: 24 SQUARES
