Louis’ Brownies

This is a delicious chewy brownie that is especially well suited for large groups.

2 (26 or 28-ounce) packages brownie mix

Eggs

Vegetable oil

¾ cup chocolate icing

1 cup chopped pecans

¼ cup granulated sugar plus some for coating pan

All vegetable shortening

Preheat the oven to 350°. In a large mixing bowl prepare the brownie mix according to package directions, except use 1 less egg than called for in the preparation and use ½ cup less oil. Add the chocolate icing, pecans, and sugar. Mix gently. Do not beat. Grease two baking pans with the shortening and coat with sugar. Pour and spread the brownie mix into the baking pans. Bake for 15 to 17 minutes.

Hint: Remove the brownies from the oven while the center of the brownies is still loose. Be careful. If this recipe is cooked until the centers are firm, the end result will be hard and crisp brownies that are overcooked.

YIELD: 6 TO 7 DOZEN BROWNIES
