Eight-Layer Butter Cake

Seena Wilkes from Surrency, Georgia, gave us this recipe. She often makes this cake for her family and friends on birthdays and other special occasions.

1 (18.25-ounce) box butter cake mix

Nonstick baking spray

FROSTING

1 cup (2 sticks) margarine

2 cups granulated sugar

½ cup canned evaporated milk

⅓ cup cocoa powder

½ teaspoon vanilla extract

5 marshmallows

Preheat the oven to 350°. Follow the directions on the box to mix the cake. After mixing, spray eight 8-inch cake pans with a nonstick baking spray and divide the batter equally among the eight pans. Cook the layers, four pans at a time, until golden brown. Remove from the oven and cool completely before icing.

For the frosting, in a saucepan on medium heat melt the margarine. Stir in the sugar, milk, and cocoa powder. Boil for 2 minutes. Remove from the heat and add the vanilla and marshmallows. Beat until the icing is creamy enough to spread. Spread the icing on each layer of the cake as you stack them on top of one another.

YIELD: 1 (8-LAYER) CAKE
