Fresh Apple Cake

This recipe is a favorite of Elton and Jean Wright of Social Circle. Elton is a friend and employee of the Van Dykes. He is the “head chef” at home, a role for which his wife is very grateful.

2 cups granulated sugar

½ cup vegetable oil

3 eggs

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1½ teaspoons vanilla extract

3 cups peeled and diced firm Granny Smith apples

¾ cup flaked coconut

1 cup black walnut or pecan pieces

Preheat the oven to 325°. In a large mixing bowl combine the sugar and oil. Add the eggs and beat well. In another bowl combine the flour, salt, and baking soda. Add this to the oil mixture. Mix well. Stir in the vanilla, apples, coconut, and nuts. Pour the batter into a 9-inch greased pound-cake or tube pan. Bake for 80 to 90 minutes. Cool to serve.
