Strawberry Cake

This is another scrumptious recipe from Nell Baines. This is a favorite of Billie’s son, Chip, and either Billie or Nellie makes this cake for him every year for his birthday. Nell says that she normally makes the frosting for this cake first and uses the remaining strawberries in the cake.

1 (3-ounce) package strawberry gelatin

½ cup boiling water

1 (18.25-ounce) box butter recipe golden cake mix

¾ cup vegetable oil

4 large eggs

½ (10-ounce) box frozen strawberries, thawed

STRAWBERRY FROSTING

1 (16-ounce) box confectioners’ sugar

½ cup (1 stick) butter or margarine, softened

½ (10-ounce) box frozen strawberries, thawed

Preheat the oven to 350°. In small bowl dissolve the gelatin in the boiling water. Set aside to cool. In a large mixing bowl combine the cake mix, vegetable oil, and the eggs one at a time. Beat to mix. Stir in half the box of strawberries and the gelatin mixture. Bake in two greased and sugared 9-inch cake pans for 25 to 30 minutes. Remove from the oven. Set aside to cool. Cover the top and sides with the strawberry frosting.

For the strawberry frosting, in a large bowl with an electric mixer beat the sugar and butter. Add the remaining ½ box strawberries one at a time and mix until the frosting is moistened.

YIELD: 1 (2-LAYER) CAKE
