Merry Cherry Fudge

Vegetable cooking spray

36 maraschino cherries with stems

1 (12-ounce) package semisweet chocolate morsels

6 (1-ounce) squares bittersweet chocolate, chopped

1 (14-ounce) can sweetened condensed milk

1 teaspoon maraschino cherry juice

2 cups chopped pecans

Lightly coat an 8 × 8-inch-square pan with cooking spray. Blot the cherries dry with paper towels. In a heavy saucepan on very low heat combine the semisweet and bittersweet chocolate. Stir constantly until the chocolate is melted and smooth. Remove from the heat. Stir in the sweetened condensed milk and cherry juice. Stir in the pecans. Spoon the mixture into the prepared pan. Immediately press the cherries into the fudge, leaving the top of each cherry with the stem exposed. Cover and chill for 2 hours or until firm. Cut into 1-inch squares with a cherry on each square.
